Ingredients

  • 500 grams Fresh okra
  • 2 tablespoons Coconut oil
  • 1 medium Red onion
  • 3 cloves Garlic cloves
  • 1 teaspoon Fresh ginger
  • 1 large Tomato
  • 1 teaspoon Red chili flakes
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro leaves
  • 1 tablespoon Fresh lime juice

Directions

Step 1

Wash the okra thoroughly and pat dry with a towel. Trim both ends and slice each pod into 1 cm rounds.

Step 2

Thinly slice the red onion, mince the garlic, grate the fresh ginger, and dice the tomato into small chunks.

Step 3

Heat a large skillet or wok over medium heat and add the coconut oil.

Step 4

Once the oil is hot, add the red onion and sauté for 2-3 minutes until soft and translucent.

Add the minced garlic and grated ginger, and cook for another 30 seconds until fragrant.

Increase the heat to medium-high and stir in the okra. Cook for 5-6 minutes, stirring occasionally, until the okra starts to brown and the sliminess reduces.
