Ingredients

  • 4 sheets nori sheets
  • 200 grams crab meat (cooked and shredded)
  • 2 tablespoons mayonnaise (Paleo-compliant)
  • 1 teaspoon sriracha (Paleo-compliant)
  • 1 medium-sized cucumber
  • 1 medium-sized avocado
  • 2 cups cauliflower rice (cooked and cooled)
  • 1 tablespoon rice vinegar
  • 0.25 teaspoon sea salt
  • 1 teaspoon toasted sesame seeds

Directions

Step 1

In a small bowl, mix the Paleo-compliant mayonnaise and sriracha to create a spicy mayo sauce. Set aside.

Step 2

Squeeze any excess moisture from the cooked cauliflower rice using a cheesecloth or clean kitchen towel. Place the cauliflower rice in a bowl and mix in the rice vinegar and sea salt. Let it cool to room temperature if still warm.

Step 3

Slice the cucumber into thin matchsticks and the avocado into thin slices.

Step 4

Lay a sheet of nori shiny side down on a bamboo sushi mat or clean kitchen towel.

Step 5

Spread a thin, even layer of cauliflower rice over the nori, leaving about 1 inch at the top edge uncovered to seal the roll later.

Step 6

Layer a small amount of shredded crab meat horizontally along the center of the cauliflower rice. Drizzle a small amount of the spicy mayo over the crab. Add a few cucumber matchsticks and slices of avocado beside the crab.
