  • 4 pieces chicken thighs, boneless and skinless
  • 3 tablespoons olive oil
  • 3 cloves fresh garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon paprika
  • 0.5 teaspoon ground cayenne pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper, freshly ground
  • 1 large red bell pepper, sliced
  • 1 medium zucchini, sliced into thin rounds
  • 1 medium yellow onion, sliced
  • 2 tablespoons coconut aminos
  • 2 tablespoons fresh cilantro, chopped
  • 1 whole lime, cut into wedges

Directions

Step 1

In a small bowl, combine paprika, ground cayenne pepper, ground cumin, smoked paprika, sea salt, and black pepper. Mix well to create a spice rub.

Step 2

Rub the spice mixture evenly over the chicken thighs on both sides. Let the chicken rest while you prepare the vegetables.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken thighs to the skillet and cook for 5-6 minutes on each side, or until golden brown and fully cooked (165°F/74°C internal temperature). Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Reduce heat to medium and add the minced garlic, grated ginger, yellow onion, red bell pepper, and zucchini. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp.

Step 5

Return the cooked chicken thighs to the skillet. Add coconut aminos and stir to coat the chicken and vegetables evenly in the sauce. Cook for an additional 2-3 minutes to allow the flavors to meld together.
