Directions

Step 1

Start by preparing the cauliflower rice. If store-bought, skip this step. Pulse cauliflower florets in a food processor until they reach a rice-like texture.

Step 2

Cook the cauliflower rice in a large skillet over medium heat for 3-5 minutes, stirring regularly until tender. Season with a pinch of salt and set aside to cool.

While the cauliflower rice cools, cut the avocado into thin slices and julienne the cucumber into thin strips. Prepare the imitation crab (or substitute) into small, manageable pieces.
