Ingredients

  • 500 g Ground mutton
  • 1 medium Red onion, finely chopped
  • 3 pieces Garlic cloves, minced
  • 2 tbsp Fresh cilantro, chopped
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Paprika
  • 0.5 tsp Ground turmeric
  • 0.25 tsp Cayenne pepper
  • 1 tsp Sea salt
  • 0.5 tsp Ground black pepper
  • 1 large Egg
  • 1 tbsp Olive oil (for greasing grill or pan)
  • 1 tbsp Squeeze of fresh lemon juice (optional)

Directions

Step 1

In a large mixing bowl, combine the ground mutton with the finely chopped onion, minced garlic, cilantro, parsley, and all the spices (ground cumin, ground coriander, paprika, turmeric, cayenne pepper, sea salt, and black pepper).

Step 2

Crack the egg into the mixture and use your hands to combine everything thoroughly until evenly mixed.

Step 3

Divide the mixture into 8 equal portions and shape each into a cylindrical kebab, about 4 inches long and 1 inch in diameter. If the mixture is sticky, wet your hands lightly with water to make shaping easier.

Step 4

Preheat a grill or stovetop grill pan over medium-high heat. Lightly grease the grill or pan with olive oil using a brush or paper towel.

Step 5

Place the kebabs on the hot grill or pan. Cook for about 6-8 minutes on each side, turning carefully with tongs, until browned and fully cooked through.

Once cooked, remove the kebabs from the grill and let rest for 2-3 minutes.
