Ingredients

  • 1 cup Almond flour
  • 3/4 cup Tapioca flour
  • 2 tablespoons Coconut flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Sea salt
  • 1 large Egg
  • 1/3 cup Warm water
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a medium-sized mixing bowl, whisk together the almond flour, tapioca flour, coconut flour, baking powder, and sea salt until well combined.

Step 3

In a separate small bowl, lightly beat the egg, then mix in the warm water and olive oil.

Step 4

Gradually pour the wet ingredients into the dry ingredients, stirring continuously until a dough forms. If the dough is too sticky, sprinkle in a tiny bit more tapioca flour until it becomes workable.

Step 5

Divide the dough into 4 equal portions. Roll each portion into a ball, then flatten into a 1/4-inch thick disc (about 5-6 inches in diameter).

Step 6

Place the discs on the prepared baking sheet and bake for 8-10 minutes, or until the edges are slightly golden. For extra puffiness, flip the pitas halfway through baking.

Step 7

Remove the pitas from the oven and allow them to cool slightly before serving.

Step 8

Serve warm and enjoy with your favorite dips, fillings, or spreads!
