Ingredients

  • 4 medium-sized zucchini
  • 2 tablespoons olive oil
  • 4 whole garlic cloves
  • 1 teaspoon red chili flakes
  • 1 can (14 ounces) crushed tomatoes (no added sugar)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 5 leaves fresh basil leaves
  • 1 cup optional cooked chicken or shrimp (for added protein)

Directions

Step 1

Wash the zucchini thoroughly and trim the ends. Using a spiralizer, create zucchini noodles (zoodles) and set them aside.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Peel and finely chop the garlic cloves, then add them to the skillet. Sauté until fragrant, about 1-2 minutes.

Step 4

Add the red chili flakes to the skillet and stir for 30 seconds to release their heat.

Step 5

Pour the crushed tomatoes into the skillet. Stir well and bring the mixture to a simmer over medium-low heat.

Step 6

Season the sauce with salt and black pepper. Let it simmer for 10-12 minutes, stirring occasionally, to allow the flavors to meld together.

Step 7

If using optional cooked chicken or shrimp, add it to the skillet during the last 5 minutes of cooking to warm through.

Step 8

Meanwhile, heat another skillet over medium heat. Add the zucchini noodles and sauté for 2-3 minutes, just until tender but still slightly firm.

Step 9

Divide the zucchini noodles among four plates. Top each portion with the spicy tomato sauce.

Step 10

Garnish with fresh basil leaves and serve immediately.
