Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.
In a medium-sized mixing bowl, combine the almond flour, tapioca starch, coconut flour, and salt. Mix well to combine the dry ingredients.
Add the Paleo sourdough starter and olive oil to the dry ingredients. Stir until a dough begins to form.
If using garlic powder or herbs, mix them into the dough at this stage for additional flavor.
Knead the dough gently with your hands to make it smooth and cohesive. If it's too sticky, dust lightly with a small amount of tapioca starch.
Place the dough between two sheets of parchment paper and roll it out to approximately 1/16 inch (1.5 mm) thick. Aim for an even thickness to ensure even baking.
Carefully remove the top sheet of parchment paper. Using a sharp knife or pizza cutter, cut the dough into rectangular or square cracker shapes.
Transfer the parchment paper with the cut dough onto the baking sheet.
