Ingredients

  • 1 lb Pork shoulder (ground)
  • 2 tbsp Coconut aminos
  • 1 tsp Sesame oil
  • 1 tsp Ginger (grated)
  • 1 clove Garlic (minced)
  • 2 tbsp Scallions (finely chopped)
  • 1 cup Chicken bone broth (gelled, chilled)
  • 1.5 cups Arrowroot flour
  • 0.5 cup Tapioca flour
  • 2 tbsp Coconut flour
  • 0.5 cup Hot water
  • 0.5 tsp Salt
  • 1 tbsp Avocado oil

Directions

Step 1

1. Start by preparing the dough. In a mixing bowl, combine arrowroot flour, tapioca flour, coconut flour, and salt.

Step 2

2. Gradually add hot water and avocado oil to the dry ingredients, stirring with a wooden spoon until a dough forms. Knead lightly until smooth, wrap in plastic wrap, and let rest for 20 minutes.

Step 3

3. While the dough rests, prepare the filling. In a bowl, mix ground pork, coconut aminos, sesame oil, grated ginger, garlic, and scallions until well combined.

Step 4

4. Dice the chilled, gelled chicken bone broth into small cubes and gently fold it into the pork mixture. This will create the 'soup' within the dumplings.

Step 5

5. Divide the rested dough into small portions and roll each into a ball. Using a rolling pin, flatten each ball into thin, circular wrappers approximately 3 inches in diameter.

Step 6

6. Place a small spoonful of filling into the center of a wrapper, then carefully fold and pleat the edges to seal the dumpling completely. Repeat with remaining dough and filling.

Step 7

7. Line a bamboo or metal steamer with parchment paper or cabbage leaves to prevent sticking. Place the dumplings inside, leaving space between each one.

Step 8

8. Steam the dumplings over boiling water for 12–15 minutes, or until the dough becomes translucent and the filling is cooked through.

Step 9

9. Serve the Paleo Soup Dumplings hot with a side of coconut aminos or a Paleo-friendly dipping sauce of your choice.
