Ingredients

  • 2 cups Cassava flour
  • 2 tablespoons Coconut flour
  • 0.5 teaspoons Sea salt
  • 1.25 cups Warm water
  • 4 tablespoons Avocado oil
  • 2 cups Cooked shredded chicken
  • 1 cup Homemade salsa
  • 1 large Diced avocado
  • 0.25 cup Cilantro leaves
  • 1 whole Fresh lime

Directions

Step 1

In a large mixing bowl, combine the cassava flour, coconut flour, and sea salt.

Step 2

Gradually pour in the warm water, mixing with your hands until a soft dough forms. It should not stick to your hands but should hold together well.

Step 3

Divide the dough into 8 equal portions and roll each portion into a ball.

Step 4

Flatten each ball into a disk about 3-4 inches in diameter and roughly 1/3 inch thick.

Heat 2 tablespoons of avocado oil in a skillet over medium heat.

Place the disks into the skillet, working in batches if needed, and cook for 2-3 minutes on each side, until lightly golden. Remove from heat.

While the sopes are still warm, use your fingers or the edge of a spoon to pinch up the edges of each disk, creating a small rim around the edge.
