Ingredients

  • 2 cups Almond flour
  • 1 cup Tapioca starch
  • 2 tablespoons Coconut flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Sea salt
  • 2 large Eggs
  • 0.5 cup Coconut milk
  • 1 teaspoon Apple cider vinegar
  • 1 tablespoon Honey

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, tapioca starch, coconut flour, baking powder, and sea salt. Mix well to evenly distribute the dry ingredients.

Step 3

In a separate bowl, whisk together the eggs, coconut milk, apple cider vinegar, and honey until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and stir until a dough forms. The dough should be slightly sticky but manageable.

Step 5

Using wet hands or a spoon, divide the dough into 6 equal portions. Shape each portion into a round bun and place it on the prepared baking sheet, leaving space between each bun to allow for expansion during baking.

Step 6

Optional: Lightly brush the tops of the buns with coconut milk for a golden finish.

Step 7

Bake in the preheated oven for 20–25 minutes, or until the buns are set and lightly golden on top.

Step 8

Remove from the oven and let the buns cool on a wire rack for at least 10 minutes before serving. Enjoy them as sandwich buns, dinner rolls, or on their own!
