Ingredients

  • 2 medium zucchini
  • 1 medium sweet potato
  • 1 cup broccoli
  • 1 large carrot
  • 1 medium bell pepper (red or yellow)
  • 2 tablespoons coconut oil
  • 1 teaspoon ginger
  • 2 cloves garlic
  • 3 tablespoons coconut aminos
  • 1 tablespoon sesame seeds
  • 2 stalks green onions
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Using a spiralizer, create noodles from the zucchini and sweet potato. Set them aside.

Step 2

Cut the broccoli into small florets and thinly slice the carrot and bell pepper. Set these vegetables aside.

Step 3

Mince the garlic and grate the ginger.

Step 4

In a large skillet or wok, heat the coconut oil over medium-high heat.

Step 5

Add the minced garlic and ginger to the hot oil and sauté for about 30 seconds until fragrant.

Step 6

Add the broccoli, carrot, and bell pepper to the skillet and stir-fry for about 3-4 minutes until the vegetables begin to soften.

Add the zucchini and sweet potato noodles to the skillet and toss gently with the other vegetables.
