Using a spiralizer, create noodles from the zucchini and sweet potato. Set them aside.
Cut the broccoli into small florets and thinly slice the carrot and bell pepper. Set these vegetables aside.
Mince the garlic and grate the ginger.
In a large skillet or wok, heat the coconut oil over medium-high heat.
Add the minced garlic and ginger to the hot oil and sauté for about 30 seconds until fragrant.
