Ingredients

  • 1 large head Cauliflower
  • 250 grams Shrimp, peeled and deveined
  • 2 tablespoons Coconut aminos
  • 1 tablespoon Coconut oil
  • 1 teaspoon Sesame oil
  • 2 stalks Green onions, finely chopped
  • 4 Nori sheets, halved
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Lemon juice

Directions

Step 1

Begin by trimming and cutting the cauliflower into florets, then pulse them in a food processor until they reach a rice-like consistency.

Step 2

In a large skillet, heat the coconut oil over medium heat. Add the cauliflower rice, sprinkle with sea salt and pepper, and sauté for 6-8 minutes or until slightly tender and moisture has evaporated. Transfer to a large mixing bowl and let cool.

Step 3

In the same skillet, add the shrimp and cook for about 2 minutes on each side until they turn pink and opaque. Remove from heat and chop into small pieces.

In a small bowl, combine the coconut aminos, sesame oil, lemon juice, and green onions. Add the chopped shrimp to the mixture and toss to coat evenly.
