Ingredients

  • 2 cups almond flour
  • 0.25 cup coconut flour
  • 0.5 cup tapioca starch
  • 0.5 cup coconut oil
  • 1 large egg
  • 2 tablespoons water
  • 1 teaspoon salt
  • 1 pound ground beef
  • 1 large onion, finely chopped
  • 1 large tomato, finely chopped
  • 0.5 cup fresh parsley, chopped
  • 0.25 cup pine nuts
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground allspice
  • 0.25 teaspoon ground cinnamon
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

In a mixing bowl, combine almond flour, coconut flour, and tapioca starch. Add the melted coconut oil, egg, water, and salt. Stir until the dough comes together.

Step 3

Knead the dough gently and form it into a ball. Wrap it in plastic wrap and refrigerate it for about 15 minutes to firm up slightly.

Step 4

While the dough chills, prepare the filling. In a large skillet over medium heat, cook the ground beef until browned and cooked through, breaking it apart as it cooks.

Step 5

Add the onion and tomato to the beef and cook for about 5 minutes, or until the onions are translucent.

Step 6

Stir in the parsley, pine nuts, lemon juice, cumin, allspice, cinnamon, and black pepper. Cook for another 2-3 minutes, then remove from heat and let it cool slightly.

Step 7

Remove the dough from the refrigerator and divide it into 8 equal pieces. Roll each piece into a ball, then flatten it into a circle about 4 inches in diameter.

Step 8

Place a generous tablespoon of the meat filling in the center of each circle. Fold the sides of the circle towards the center while leaving a small opening at the top, creating a triangular or square shaped pie with the meat slightly exposed.

Step 9

Place the sfiha on the prepared baking sheet and bake in the preheated oven for 20-25 minutes or until the crust is golden brown.

Step 10

Let the sfiha cool slightly on a wire rack before serving. Enjoy warm or at room temperature.
