Ingredients

  • 6 large eggs
  • 2 tablespoons coconut milk
  • 2 tablespoons olive oil
  • 8 ounces ground sausage (pork or turkey, Paleo-friendly)
  • 4 cups fresh spinach
  • 0.5 teaspoons sea salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Crack the eggs into a medium bowl and add the coconut milk, sea salt, and black pepper. Whisk the mixture until well combined and slightly frothy. Set aside.

Step 2

In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground sausage and cook, breaking it up with a spatula, until browned and cooked through, about 5-7 minutes. Remove the cooked sausage from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the fresh spinach and sauté until it is wilted and tender, about 2-3 minutes.
