Directions

Step 1

Peel and dice the sweet potato into small cubes. Finely chop the onion and bell pepper.

In a large skillet, heat 1 tablespoon of coconut oil over medium heat. Add the diced sweet potatoes and season with a pinch of sea salt and black pepper.
