  • 1 cup broccoli florets
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons coconut aminos
  • 2 stalks, sliced green onions
  • 0.25 cup, chopped fresh cilantro

Directions

Step 1

Begin by preparing the cauliflower rice. Cut the cauliflower into small florets and pulse in a food processor until it reaches a rice-like consistency. Set aside.

Step 2

In a large skillet over medium heat, heat 1 tablespoon of coconut oil. Add the ground beef or chicken and cook until browned, breaking it apart with a spatula. Once cooked, remove it from the skillet and set aside.

In the same skillet, add the remaining tablespoon of coconut oil. Add the diced onion and minced garlic, sautéing until the onion is translucent and fragrant, about 3 minutes.
