Preheat your oven to 180°C (350°F).
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 5 minutes.
Add the spinach and cook until wilted. If using frozen spinach, ensure it's thawed and excess moisture is squeezed out prior. Remove from heat and let cool.
In a large mixing bowl, combine the ground beef, almond flour, 1 egg, carrot, tomato paste, oregano, basil, sea salt, and black pepper.
Once the spinach mixture has cooled, add it to the beef mixture and mix thoroughly until all ingredients are well combined.
Place a large sheet of parchment paper on a flat surface. Spread the beef mixture evenly over the parchment paper, forming a rectangle about 1/2 inch thick.
Carefully roll the meat into a log shape, using the parchment paper to help keep it tight. Seal the edges by pressing them together.
Transfer the meat roll to a baking dish, seam side down. Brush the top of the roll with the remaining tablespoon of olive oil.
Bake in the preheated oven for approximately 35-40 minutes, or until the meat is cooked through and has an internal temperature of 75°C (165°F).
