Ingredients

  • 1 pound ground beef
  • 2 medium russet potatoes
  • 2 tablespoons olive oil

  • 1 medium bell pepper

  • 1 cup beef broth
  • 1 teaspoon fresh thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 stalks green onions

Directions

Step 1

Peel the russet potatoes and cut them into small cubes. Chop the onion and bell pepper, and mince the garlic cloves.

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Remove the beef from the skillet and set aside.
