Ingredients

  • 1 pound Ground duck
  • 0.25 cup Almond flour
  • 1 large Egg
  • 1 tablespoon Fresh thyme leaves
  • 1 teaspoon Fresh rosemary, chopped
  • 2 cloves Garlic, minced
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Coconut oil
  • 4 large Lettuce leaves
  • 1 medium Tomato, sliced
  • 0.25 medium Red onion, sliced
  • 1 medium Avocado, sliced

Directions

Step 1

In a large mixing bowl, combine the ground duck, almond flour, egg, fresh thyme, chopped rosemary, minced garlic, onion powder, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.

Step 2

Divide the mixture into 4 equal portions and shape them into patties about 3/4-inch thick.

Step 3

Heat the coconut oil in a large skillet over medium-high heat.

Step 4

Once the oil is hot, add the duck patties to the skillet. Cook for about 5 to 6 minutes on each side or until the internal temperature reaches 165°F (74°C) and they are browned through.

Step 5

Transfer the cooked duck burgers to a plate lined with paper towels to drain any excess oil.

Step 6

To serve, place each duck patty on a large lettuce leaf. Top with slices of tomato, red onion, and avocado.

Step 7

Fold the lettuce leaf to encase the burger and serve immediately while warm.
