Ingredients

  • 2 tablespoons coconut oil
  • 1 pound grass-fed ground beef
  • 1 medium onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 medium bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 medium tomato, diced
  • 8 large lettuce leaves
  • 1 large avocado, sliced
  • 1 large lime, cut into wedges
  • 0.25 cup fresh cilantro, chopped

Directions

Step 1

Heat a large skillet over medium heat and add the coconut oil.

Step 2

Once the oil is melted and hot, add the chopped onion and minced garlic. Sauté for about 3 minutes until the onion is translucent and fragrant.

Step 3

Add the diced bell pepper to the skillet and sauté for another 2-3 minutes until it starts to soften.

Step 4

Increase the heat to medium-high and add the ground beef to the skillet. Use a spatula to break the beef into small pieces as it cooks.

Step 5

Season the beef with cumin, paprika, salt, and black pepper. Stir well to combine all the spices with the meat.

Step 6

Cook the beef for about 8-10 minutes until fully browned and no pink remains.

Step 7

Add the diced tomato to the skillet and cook for an additional 2 minutes until the tomato is warm and slightly softened.

Step 8

Remove the skillet from heat and let the beef mixture cool slightly.

Step 9

Lay the large lettuce leaves flat on a clean surface. Divide the beef mixture evenly among the leaves.

Step 10

Top each lettuce wrap with sliced avocado and a sprinkle of fresh cilantro.

Step 11

Gently roll each lettuce leaf around the beef filling to create a wrap. You may secure them with a toothpick if needed.

Step 12

Serve the wraps with lime wedges on the side. Squeeze fresh lime juice over the wraps just before eating for a burst of citrus flavor.
