Ingredients

  • 2 pounds Beef sirloin tips, cut into bite-sized pieces
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 2 cups Beef broth, low-sodium
  • 2 tablespoons Coconut aminos
  • 1 tablespoon Arrowroot powder
  • 2 tablespoons Cold water
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Fresh rosemary, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat olive oil in a large skillet over medium-high heat.

Step 2

Add the beef tips to the skillet and season with salt and black pepper. Sauté until browned on all sides, about 6-8 minutes.

Step 3

Remove beef tips from the skillet and set aside on a plate.

Step 4

In the same skillet, add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.

Step 5

Pour in the beef broth and coconut aminos, stirring to combine, and bring the mixture to a simmer.

Step 6

Return the beef tips to the skillet and add the fresh thyme and rosemary.

Step 7

Cover the skillet, reduce heat to low, and let simmer for 30-40 minutes, or until the beef is tender.

Step 8

In a small bowl, mix the arrowroot powder with cold water to create a slurry.

Step 9

Uncover the skillet and stir in the slurry. Continue cooking for another 5-7 minutes, stirring occasionally, until the sauce thickens.

Step 10

Adjust seasoning with additional salt and pepper if necessary.

Step 11

Serve hot, garnished with extra fresh herbs if desired.
