Ingredients

  • 1 pound ground beef
  • 1 medium head cauliflower
  • 2 tablespoons coconut oil
  • 3 minced garlic cloves
  • 1 medium, diced onion
  • 1 diced red bell pepper
  • 2 medium, finely chopped carrots
  • 3 tablespoons coconut aminos
  • 1 teaspoon, grated ginger
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 sliced green onions
  • 1 tablespoon sesame seeds

Directions

Step 1

Cut the cauliflower into florets and place them into a food processor. Pulse until the cauliflower resembles rice-sized grains.

Step 2

Heat 1 tablespoon of coconut oil in a large skillet over medium heat. Add the cauliflower rice and sauté for 5-7 minutes or until tender. Season with a pinch of salt and set aside.

Step 3

In the same skillet, add the remaining tablespoon of coconut oil. Add the minced garlic and diced onion, and sauté until the onion becomes translucent, about 3 minutes.

Step 4

Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned and cooked through, about 8 minutes.

Step 5

Add the diced red bell pepper and chopped carrots to the beef mixture. Sauté for another 5 minutes until the vegetables start to soften.

Step 6

Pour in the coconut aminos and add the grated ginger, mixing well to combine. Let the mixture simmer for 2-3 minutes to blend flavors. Season with sea salt and black pepper to taste.
