Ingredients

  • 1.5 pounds grass-fed beef stew meat
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 medium yellow onion, diced
  • 2 large carrots, sliced
  • 2 celery stalks, sliced
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the beef stew meat with salt and black pepper.

Step 2

In a large pot or Dutch oven, heat olive oil over medium-high heat.

Add the beef to the pot and sear on all sides until browned, about 5-7 minutes.

Remove the beef from the pot and set aside.
