Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 3 large Eggs
  • 0.5 cup Almond milk
  • 2 tablespoons Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 pound Ground sausage
  • 1 tablespoon Olive oil
  • 4 slices Dairy-free cheese slices
  • 1 tablespoon Ghee

Directions

Step 1

In a medium bowl, mix the almond flour, coconut flour, baking powder, and salt together until well combined.

Step 2

In a separate bowl, whisk 2 eggs, almond milk, maple syrup, and vanilla extract until smooth. Gradually add the wet ingredients to the dry ingredients, stirring until a thick batter forms.

Step 3

Heat a large non-stick skillet over medium heat and lightly grease with a bit of olive oil. Pour about 1/4 cup of batter onto the skillet to form small pancakes, similar in size to English muffins.
