In a large skillet over medium heat, add 1 tablespoon of olive oil.
Once the oil is hot, add the diced onions and bell peppers. Sauté until the onions are translucent and the peppers are tender, about 5 minutes.
Add the ground pork sausage to the skillet. Break it up with a spatula and cook until fully browned and cooked through, approximately 7-8 minutes.
Drain any excess fat if necessary and set the sausage mixture aside in a bowl.
In a medium bowl, whisk together the eggs and coconut milk until well combined. Season with salt and black pepper.
