Ingredients

  • 2 cans (100g each) sardines in olive oil
  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon sea salt
  • 3 large eggs
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped scallions
  • 0.5 teaspoon garlic powder
  • 3 tablespoons coconut oil

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

Drain the sardines and set them aside in a mixing bowl. Mash them with a fork until they reach a uniform consistency.

Step 3

In a separate bowl, mix together the almond flour, coconut flour, baking powder, and sea salt.

Step 4

In another bowl, beat the eggs lightly, then add the lemon juice, parsley, scallions, and garlic powder. Stir to combine.

Step 5

Pour the egg mixture into the sardines, mixing thoroughly.

Step 6

Gradually incorporate the dry ingredients into the sardine and egg mixture, stirring until just combined.

Step 7

Melt the coconut oil and allow it to cool slightly before folding it into the sardine batter. Mix until smooth.

Step 8

Using a spoon, scoop the batter onto the prepared baking sheet, forming small mounds about 2 inches apart.

Step 9

Bake the puffs in the preheated oven for about 18-20 minutes, or until slightly golden and set.

Step 10

Remove from the oven and cool on a wire rack for a few minutes before serving warm.
