Ingredients

  • 15 pieces green bird's eye chilies
  • 2 medium green tomatoes
  • 5 pieces shallots
  • 3 pieces garlic cloves
  • 2 tablespoons fresh lime juice
  • 1 tablespoon coconut aminos
  • 1 teaspoon sea salt
  • 3 tablespoons coconut oil

Directions

Step 1

Prepare the vegetables by washing the green chilies and tomatoes. Peel the shallots and garlic cloves.

Step 2

Roughly chop the green chilies, tomatoes, shallots, and garlic. This will help them cook evenly and blend easily later.

Step 3

Heat 2 tablespoons of coconut oil in a pan over medium heat. Once hot, add the chopped shallots and sauté until fragrant and slightly golden, about 3 minutes.

Step 4

Add the chopped garlic and sauté for another 2 minutes, ensuring it doesn't burn.

Step 5

Stir in the chopped green chilies and tomatoes. Add the sea salt and mix well. Cook until the tomatoes start to soften, about 5-7 minutes.

Step 6

Transfer the cooked ingredients into a mortar and pestle (or use a food processor for convenience). Pound or blend the mixture until it reaches a coarse paste consistency. Taste and adjust seasoning if necessary.

Step 7

Add fresh lime juice and coconut aminos to the sambal paste, stirring well to combine.

Step 8

In a clean pan, heat the remaining 1 tablespoon of coconut oil over medium heat. Add the sambal paste to the pan and fry for an additional 2-3 minutes to blend the flavors.

Step 9

Remove from heat and let the sambal cool slightly before serving.

Step 10

Serve your Paleo Sambal Ijo as a condiment with grilled meats, fish, or roasted vegetables. Store leftovers in an airtight container in the refrigerator for up to one week.
