Ingredients

  • 2 pieces salmon fillets
  • 2 cups almond flour
  • 4 tablespoons coconut oil
  • 1 large egg
  • 1 tablespoon lemon juice
  • 1 tablespoon dijon mustard
  • 1 tablespoon fresh dill
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 large egg yolk
  • 1 teaspoon water

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a mixing bowl, combine almond flour, coconut oil, and a pinch of sea salt. Mix until it forms a crumbly dough.

Step 3

Beat 1 egg and add to the almond flour mixture, continuing to mix until the dough is smooth. Form it into a ball, wrap in plastic wrap, and refrigerate for 10 minutes.

Step 4

In a small bowl, mix lemon juice, dijon mustard, fresh dill, garlic powder, onion powder, 0.5 teaspoon sea salt, and black pepper. Brush this mixture evenly over the salmon fillets.

Take the dough out of the refrigerator and roll it out between two pieces of parchment paper to about 1/4 inch thickness.

Cut the rolled dough into two pieces, each large enough to encase a salmon fillet.

Place each salmon fillet on top of a piece of dough. Fold the dough over to enclose the salmon, pinching the edges firmly to seal.

In a small bowl, whisk together the egg yolk and water to make an egg wash. Brush it over the dough to give it a nice color as it bakes.

Place the en croute salmon pieces on the prepared baking sheet and bake in the preheated oven for 20 minutes, or until the crust is golden brown and the salmon is cooked through.

Remove from the oven and allow to sit for a few minutes before serving warm.
