  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 large red bell pepper, diced
  • 0.5 medium red onion, finely chopped
  • 0.25 cup fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Peel the sweet potatoes and cut them into 1-inch cubes.

Step 3

In a large bowl, toss the sweet potato cubes with 2 tablespoons of olive oil, sea salt, black pepper, and garlic powder.

Spread the sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, flipping halfway, until they are tender and slightly crisp on the edges.

While the sweet potatoes are roasting, prepare the other salad ingredients. Dice the red bell pepper and finely chop the red onion and fresh parsley.

Step 6

In a small bowl, whisk together the remaining tablespoon of olive oil, lemon juice, and Dijon mustard to make the dressing.

Step 7

Once the sweet potatoes are done roasting, let them cool slightly before assembling the salad.

In a large salad bowl, combine the roasted sweet potatoes, diced red bell pepper, chopped red onion, and fresh parsley.

Step 9

Pour the dressing over the salad ingredients and gently toss to combine.

Step 10

Serve immediately, or refrigerate for up to 2 days. Enjoy your fresh and flavorful Paleo Salada de Batata Doce!
