Ingredients

  • 2 cups almond flour
  • 0.5 cup coconut sugar
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon salt
  • 0.25 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 0.75 cup chopped dark chocolate (min. 70% cacao)
  • 0.5 cup paleo-friendly marshmallows

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the almond flour, coconut sugar, baking soda, cinnamon, and salt until well combined.

Step 3

In a separate small bowl, melt the coconut oil slightly and then stir in the vanilla extract.

Step 4

Add the coconut oil mixture and the egg to the dry ingredients, mixing until a dough forms and all ingredients are well incorporated.

Step 5

Gently fold in the chopped dark chocolate and paleo-friendly marshmallows into the dough.

Scoop the dough onto the prepared baking sheet using a tablespoon or small cookie scoop, spacing each scoop about 2 inches apart.
