Ingredients

  • 500 grams Ground beef
  • 500 grams Ground pork
  • 4 units Garlic cloves, minced
  • 1 teaspoon Baking soda
  • 150 milliliters Warm water
  • 1.5 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Coriander
  • 1 teaspoon Thyme
  • 0.5 teaspoon Cumin
  • 100 milliliters Beef broth

Directions

Step 1

In a large bowl, combine the ground beef and ground pork, mixing gently with your hands until well blended.

Step 2

In a small bowl, mix the minced garlic with the baking soda and warm water. Stir until the baking soda is dissolved.

Step 3

Pour the garlic and baking soda mixture into the meat mixture. Add the salt, black pepper, paprika, coriander, thyme, and cumin. Mix everything thoroughly until the spices are evenly distributed.

Step 4

Gradually add the beef broth while continuing to knead the mixture, ensuring the liquid is fully incorporated into the meat.

Step 5

Cover the bowl with plastic wrap and let the mixture rest in the refrigerator for at least one hour to allow the flavors to meld.

Step 6

After the resting period, preheat your grill to medium-high heat.

Step 7

Take about 2 tablespoons of the meat mixture and shape it into a sausage about 3 inches long. Repeat with the rest of the mixture.

Step 8

Lightly oil the grill grates and place the mici on the grill. Cook for about 7-8 minutes on each side, until they are browned and cooked through.

Step 9

Remove the mici from the grill and let them rest for a couple of minutes before serving. Serve hot with your choice of Paleo-friendly sides.
