Ingredients

  • 1 3-4 pounds Whole chicken
  • 3 tablespoons Olive oil
  • 1 whole Lemon
  • 4 cloves Garlic cloves
  • 2 tablespoons Fresh rosemary
  • 2 tablespoons Fresh thyme
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 pounds Red potatoes

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Pat the chicken dry with paper towels and place it in a large roasting pan.

Step 3

Drizzle 2 tablespoons of olive oil over the chicken and rub it in with your hands to cover the entire surface.

Step 4

Cut the lemon into quarters and place the slices inside the cavity of the chicken.

Smash the garlic cloves and add them into the chicken cavity along with 1 tablespoon each of chopped rosemary and thyme.
