Ingredients

  • 12 ounces Sweet Potato Rigatoni
  • 1 pound Ground Beef (grass-fed)
  • 2 tablespoons Olive Oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic Cloves, minced
  • 28 ounces Crushed Tomatoes
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 0.25 cup Fresh Basil Leaves, for garnish

Directions

Step 1

Bring a large pot of water to a boil. Add a pinch of salt and sweet potato rigatoni. Cook according to the package instructions until al dente, then drain and set aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Step 3

Stir in minced garlic and cook for another minute until fragrant.

Step 4

Add the ground beef to the skillet. Cook until the meat is browned, breaking it up with a spoon. This should take about 7-10 minutes.

Step 5

Once the beef is browned, drain off excess fat if necessary, then stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and black pepper.

Step 6

Bring the sauce to a simmer, reduce the heat to low, and let it cook uncovered for about 20 minutes, stirring occasionally until the sauce has thickened slightly.

Step 7

Taste and adjust seasoning if needed.

Step 8

Combine the cooked rigatoni with the meat sauce, tossing gently to coat the pasta well.

Step 9

Serve hot, garnished with fresh basil leaves.
