  • 1 cauliflower head
  • 2 tablespoons olive oil
  • 1 yellow onion
  • 3 garlic cloves
  • 5 cups fresh spinach

Directions

Step 1

Remove the leaves from the cauliflower head and chop it into florets. Use a food processor to pulse the florets until they resemble rice grains. Alternatively, grate the florets using a box grater.

Finely chop the yellow onion and mince the garlic cloves.
