Ingredients

  • 1 large head Cauliflower
  • 2 tablespoons Olive oil
  • 1 medium, chopped Onion
  • 2 cloves, minced Garlic
  • 1 cup Fresh peas
  • 1 cup, kernels cut from cob Sweet corn
  • 1 medium, diced Red bell pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh parsley
  • 1 tablespoon Lemon juice

Directions

Step 1

Remove the leaves and stem from the cauliflower head. Cut into florets. Use a food processor to pulse the florets until the texture resembles rice. This is your cauliflower rice.

In a large skillet, heat olive oil over medium heat.

Add the chopped onion to the skillet and sauté for 3-4 minutes until they become translucent.
