Ingredients

  • 450 grams Extra-firm tofu
  • 200 grams Cherry tomatoes
  • 1 medium Cucumber
  • 1 medium Red bell pepper
  • 0.5 medium Red onion
  • 0.5 cup Fresh cilantro
  • 2 tablespoons Lemon juice
  • 3 tablespoons Olive oil
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Start by pressing the extra-firm tofu to remove excess water. Slice the tofu block in half horizontally, lay between two clean kitchen towels, place a weighted object on top, and press for about 15 minutes.

Step 2

Once pressed, cut the tofu into 1/2-inch cubes. Set aside.

Step 3

Wash and halve the cherry tomatoes. Peel the cucumber and cut it into small dice or half-moons. Remove seeds from the red bell pepper and dice it into 1/2-inch pieces. Finely dice the red onion.

Step 4

In a large bowl, combine the tofu cubes, cherry tomatoes, cucumber, bell pepper, and red onion.

Step 5

Chop the fresh cilantro finely and add to the bowl with vegetables and tofu.

Step 6

In a small bowl, whisk together the lemon juice, olive oil, sea salt, and black pepper.

Step 7

Pour the dressing over the salad mixture and gently toss everything together until well combined and the tofu and veggies are evenly coated.

Adjust seasoning to taste with more salt or lemon juice if desired.

Let the salad sit for about 5 minutes to allow the flavors to meld before serving.
