Peel and dice the mangoes into bite-sized chunks. Place them into a large mixing bowl.
Halve the cucumber lengthwise and use a spoon to scoop out the seeds. Slice the cucumber into thin half-moons and add to the bowl with the mango.
Core and thinly slice the red bell pepper, then add the slices to the salad mixture.
Thinly slice the red onion and add to the bowl.
Roughly chop the fresh cilantro leaves and add them to the salad. If using, add the mint leaves now as well.
In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper until well combined.
Pour the dressing over the salad and gently toss all the ingredients together until the salad is coated with the dressing.
