Ingredients

  • 4 large red bell peppers
  • 0.25 cup apple cider vinegar
  • 0.5 cup honey
  • 2 tablespoons fresh lemon juice
  • 0.5 cup water
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground cayenne pepper
  • 1 packet gelatin

Directions

Step 1

Wash and dry the bell peppers. Cut them in half and remove the seeds and membranes. Chop the peppers into small pieces.

Step 2

In a large saucepan, combine the chopped red bell peppers, apple cider vinegar, honey, lemon juice, water, salt, and cayenne pepper.

Step 3

Place the saucepan on medium-high heat and bring the mixture to a boil, stirring occasionally.

Step 4

Once boiling, reduce the heat to low and simmer for 30 to 35 minutes, or until the peppers are very soft and the mixture has slightly thickened.

Step 5

Remove the saucepan from heat and allow it to cool for a few minutes.

Step 6

Using an immersion blender, blend the mixture until smooth. You can also use a regular blender, but be cautious with the hot mixture.

Sprinkle the gelatin over the surface of the mixture and stir well until fully dissolved.

Return the sauce to the stove and bring to a gentle simmer, stirring constantly for about 5 minutes to ensure the gelatin is entirely incorporated.

Step 9

Remove from heat and let the jam cool to room temperature. As it cools, it will thicken further.

Step 10

Transfer the jam into sterilized jars, seal, and refrigerate. The jam will keep for up to two weeks in the refrigerator.
