  • 240 ml quinoa
  • 480 ml water
  • 3 large eggs
  • 60 ml coconut oil (melted)
  • 80 ml honey
  • 5 ml vanilla extract
  • 80 g almond flour
  • 5 g baking powder
  • 3 g salt
  • 3 g cinnamon

Directions

Step 1

Rinse the quinoa under cold water to remove any bitterness. Place it in a saucepan with the water.

Bring the quinoa and water to a boil over medium-high heat, then reduce the heat to a simmer. Cover and cook for 15 minutes until the water is absorbed and the quinoa is fluffy.

Step 3

Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan with coconut oil. Line the bottom with parchment paper for easy removal.

In a blender, combine the cooked quinoa, eggs, melted coconut oil, honey, and vanilla extract. Blend until smooth. The mixture should be thick and creamy.
