Ingredients

  • 4 large Quinces
  • 3 cups Water
  • 0.75 cup Honey
  • 1 medium Lemon
  • 1 Cinnamon Stick

Directions

Step 1

Peel and core the quinces, then cut them into small cubes.

Step 2

Place the chopped quinces into a large saucepan with the water.

Step 3

Squeeze the juice from the lemon and add to the saucepan.

Step 4

Add the cinnamon stick to the mixture.

Step 5

Bring the saucepan to a boil over medium-high heat, then reduce the heat to low and simmer uncovered for about 45 minutes, stirring occasionally, until the quinces become tender and slightly pink.

Step 6

Remove and discard the cinnamon stick.

Step 7

Using an immersion blender or a potato masher, blend the mixture until smooth, or leave some chunks if desired for texture.

Step 8

Stir in the honey and continue to cook over low heat for another 30-45 minutes, stirring frequently to prevent sticking, until the jam thickens.

Step 9

To test the thickness, place a small spoonful of jam on a cold plate. Run your finger through it; if it doesn't fill in, it's ready.

Step 10

Remove from heat and let the jam cool before transferring it into sterilized jars.

Step 11

Seal the jars and store them in the refrigerator for up to 3 weeks.
