Ingredients

  • 2 tablespoons coconut oil
  • 3 large garlic cloves

  • 2 cups broccoli florets
  • 2 medium, assorted colors bell peppers
  • 2 medium carrots
  • 1 medium zucchini
  • 1 cup sugar snap peas
  • 0.25 cup coconut aminos
  • 1 tablespoon fresh lime juice
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 stalks green onions
  • 1 tablespoon sesame seeds

Directions

Step 1

Peel and finely chop the garlic cloves. Peel and grate the ginger. Set both aside.

Step 2

Cut the broccoli into small florets, discard tough stems. Slice the bell peppers and carrots into thin strips. Cut the zucchini into half-moons. Trim ends of the sugar snap peas.

Step 3

In a large skillet or wok, heat the coconut oil over medium-high heat.

Add the garlic and ginger to the skillet, stirring frequently, and cook for about 30 seconds until fragrant.
