Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons coconut oil
  • 2 cups broccoli florets
  • 1 large red bell pepper, sliced
  • 1 large carrot, julienned
  • 4 whole green onions, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 cup coconut aminos
  • 1 tablespoon sesame seeds (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat.

Step 2

Add the peeled and deveined shrimp to the skillet. Season with salt and black pepper, and stir-fry for 3-4 minutes until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of coconut oil. Once hot, add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.

Step 4

Add broccoli florets, sliced red bell pepper, and julienned carrot to the skillet. Stir-fry for 5-6 minutes until the vegetables are tender-crisp.

Step 5

Return the cooked shrimp to the skillet and add the sliced green onions. Pour in the coconut aminos and stir everything together until well combined.

Step 6

Stir-fry for an additional 2-3 minutes to ensure the shrimp and vegetables are evenly coated with the sauce.

Step 7

Taste and adjust seasoning if necessary. Optionally, sprinkle with sesame seeds before serving.
