  • 2 tablespoons Coconut flour
  • 1 teaspoon Baking soda
  • 1 tablespoon Pumpkin pie spice
  • 0.5 teaspoon Salt
  • 1 cup Pumpkin puree (not pumpkin pie filling)
  • 3 large Eggs
  • 0.5 cup Maple syrup
  • 0.25 cup Coconut oil, melted and cooled
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.

Step 2

In a large mixing bowl, combine the almond flour, coconut flour, baking soda, pumpkin pie spice, and salt. Whisk these dry ingredients together until fully incorporated.

Step 3

In a separate medium bowl, whisk together the wet ingredients: pumpkin puree, eggs, maple syrup, melted coconut oil, and vanilla extract until smooth and well combined.
