Ingredients

  • 4 pounds Pork shoulder (bone-in)
  • 2 tablespoons Coconut oil
  • 1 teaspoon Sea salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1.5 cups Paleo barbecue sauce
  • 1 medium Yellow onion, sliced
  • 4 whole Garlic cloves
  • 1 cup Apple cider vinegar
  • 1 cup Water

Directions

Step 1

In a small bowl, mix sea salt, black pepper, onion powder, garlic powder, smoked paprika, and ground cumin.

Step 2

Rub the spice mixture all over the pork shoulder, ensuring it is evenly coated.

Step 3

Heat the coconut oil in a large skillet over medium-high heat.

Step 4

Sear the pork shoulder in the skillet for about 4 minutes per side, until browned.

Step 5

Place the sliced onions and garlic cloves at the bottom of a slow cooker.

Step 6

Put the seared pork shoulder on top of the onions.

Step 7

Pour the apple cider vinegar and water around the pork shoulder, ensuring not to pour directly over the meat to preserve the spice rub.

Step 8

Cover and cook on low for 6-7 hours or until the pork is fork-tender and can be easily pulled apart.

Step 9

Once done, remove the pork from the slow cooker and use two forks to shred the meat.

Step 10

Strain the cooking liquid, discarding the solids, and mix about 1/2 cup of it with the Paleo barbecue sauce.

Step 11

Return the shredded pork to the slow cooker and stir in the prepared barbecue sauce mixture.

Step 12

Mix until the pork is thoroughly coated with the sauce, cover, and cook on low for an additional 10-15 minutes to heat through.

Step 13

Serve the pulled pork on its own or in lettuce wraps for a complete Paleo meal.
