Ingredients

  • 2 large sweet potatoes
  • 0.5 cup almond flour
  • 0.25 cup coconut flour
  • 0.25 cup fresh parsley
  • 2 pieces green onions
  • 1 large egg
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons coconut oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and chop the sweet potatoes into large chunks. Place them in a pot of boiling water and cook for about 10-12 minutes, until they are fork-tender.

Step 3

Drain the sweet potatoes and mash them in a large bowl until they are smooth.

Step 4

Finely chop the parsley and green onions. Add them to the mashed sweet potatoes along with the almond flour, coconut flour, egg, garlic powder, onion powder, sea salt, and black pepper.

Mix all the ingredients until well combined and the mixture can be easily formed into balls. If the mixture is too sticky, add a little more almond flour.

Shape the mixture into small balls, about the size of a golf ball, and flatten them slightly to resemble a croquette shape.

Heat the coconut oil in a large skillet over medium heat. Once hot, add the croquettes in batches, being careful not to overcrowd the pan.
