  • 2 tablespoons Coconut oil
  • 1 pound Beef stew meat, cut into 1-inch cubes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large Onion, diced
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 medium Carrot, sliced
  • 2 large White potatoes, peeled and cubed
  • 2 tablespoons Tomato paste
  • 2 tablespoons Curry powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Ground turmeric
  • 1 unit Cinnamon stick
  • 2 cups Beef broth
  • 1 cup Coconut milk
  • 1 tablespoon Lime juice
  • 0.25 cup Fresh cilantro, chopped

Directions

Step 1

Heat the coconut oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the beef with salt and black pepper. Add the beef to the pot and brown on all sides, about 5 minutes.

Step 3

Remove the beef from the pot and set aside.

Step 4

In the same pot, add the diced onion, and sauté until golden, about 5 minutes.

Stir in the garlic, ginger, and carrots, and cook for another 2 minutes until fragrant.

Add the tomato paste, curry powder, cumin, turmeric, and cinnamon stick, cooking for 1 minute to release the flavors.

Step 7

Return the beef to the pot along with the cubed potatoes, stirring to coat in the aromatic mixture.

Step 8

Pour in the beef broth and coconut milk. Stir well, scraping up any browned bits from the bottom of the pot.

Step 9

Bring the mixture to a boil, then reduce the heat to low. Allow it to simmer covered for about 60-75 minutes, or until the beef is tender and the potatoes are cooked through.

Step 10

Remove the cinnamon stick and discard.

Step 11

Stir in the lime juice and adjust seasoning with additional salt and pepper if needed.

Step 12

Garnish with fresh cilantro and serve hot.
