Ingredients

  • 4 pieces Pork cutlets
  • 1 cup Almond flour
  • 0.5 cup Arrowroot powder
  • 2 large Eggs
  • 2 tablespoons Coconut milk
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 4 tablespoons Coconut oil

Directions

Step 1

Begin by placing each pork cutlet between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound the cutlets until they are about 1/4 inch thick.

Step 2

In a shallow dish, combine almond flour, arrowroot powder, garlic powder, onion powder, salt, black pepper, and paprika. Stir until evenly mixed.

Step 3

In a separate shallow bowl, whisk the eggs with coconut milk until well combined.

Step 4

Dip each pork cutlet in the egg mixture, ensuring it's fully coated, then dredge it in the almond flour mixture. Press down so the coating adheres well. Repeat for all cutlets.

Step 5

In a large skillet, heat the coconut oil over medium heat. Once hot, carefully add the pork cutlets, working in batches if necessary to avoid overcrowding.

Step 6

Cook each schnitzel for approximately 3-4 minutes on one side until golden brown, then flip and cook for an additional 3-4 minutes on the other side. Adjust the heat as necessary to prevent burning.

Step 7

Transfer the cooked schnitzels to a plate lined with paper towels to drain excess oil.

Step 8

Serve immediately with a wedge of lemon or your favorite paleo-friendly dipping sauce.
