  • 2 pounds pork ribs
  • 2 tablespoons coconut oil
  • 1 large onion
  • 4 garlic cloves
  • 3 celery stalks
  • 3 medium carrots
  • 1 large sweet potato
  • 6 cups chicken broth
  • 2 bay leaves
  • 4 sprigs fresh thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups kale

Directions

Step 1

Rinse the pork ribs under cold water and pat them dry with paper towels.

Step 2

In a large pot, heat the coconut oil over medium-high heat. Add the pork ribs and brown them on all sides, about 5-7 minutes. Transfer ribs to a plate and set aside.

Step 3

Chop the onion, mince the garlic, and slice the celery and carrots. Peel and cube the sweet potato.

In the same pot, add the onion and garlic. Sauté until the onion is soft and translucent, about 5 minutes.
