Ingredients

  • 2 pounds pork shoulder, cut into 1-inch cubes
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 10 medium tomatillos, husked, rinsed, and halved
  • 2 poblano peppers, roasted and diced
  • 1 jalapeño pepper, minced (optional for extra heat)
  • 2 cups chicken broth
  • 0.5 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1 lime, juiced

Directions

Step 1

Season the pork shoulder cubes with sea salt and black pepper.

Step 2

Heat a large pot or Dutch oven over medium-high heat and add the olive oil. In batches, sear the pork until browned on all sides, about 2-3 minutes per side. Remove the pork and set aside.

Step 3

In the same pot, add the diced onion and sauté until softened, about 5-7 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.

Add the halved tomatillos to the pot and cook for 5 minutes, stirring occasionally, until they begin to soften.
